breakfast {5:15} - i missed my eggs so much while i was in houston. don't get me wrong - i actually really liked having cereal for breakfast everyday, but only because we were sleeping in late enough that lunch wasn't that far off when we woke up. cereal fills me up like...well like i ate nothing at all, so i was glad to re-invite eggs into my life. two fried ones on top of a bagel thin covered in cholula with a pear on the side. i also had a lot of water and a cup of french vanilla coffee.
morning snack {10:15} - during a particularly tense meeting i chose to eat my snack of carrots and hummus. i find crunching incredibly loudly while police are trying to mediate a fight between parents is really the only way to maintain one's sanity during a meeting like that. i am really loving tomato basil hummus lately.
lunch {12:45} - okay, this is a recycled photo but oh man i wish it weren't because my salad today was seriously SO good. i've been using chickpeas, grapes and feta, which is inspired by my favorite salad at sweetgreen, and the combo is so awesome. on top of that i've been making a dressing using roasted red pepper hummus thinned out with a little almond milk and it has been SO good. i got the idea from a tweet from robyn earlier this week and when i was out of balsamic on monday night i decided to try it. i don't know that i'll ever go back. so many flavor possibilities, so little time. try this, you won't regret it.
afternoon snack {4:45} - after another meeting (lots of meetings today meant very little planning time for me which doesn't make me happy but does make me busy so the day goes fast) i had this luna bar before heading home. i stopped at the gym and there was no parking so i decided to take my workout to my apartment complex. i luckily managed to get to the gym in time to snag a treadmill where i pounded out 3 VERY easy, very slow miles before heading back upstairs to my apartment to complete my best body bootcamp workout for the day. it was an "as many rounds as possible" workout and i learned that i lift very slowly. i tell myself that i must be keeping proper form and that's why i'm so slow but really if you saw my deadlift form you'd know that was a lie. oh well, still got a great burn in even if there weren't very many rounds.
dinner {6:30} - love me some leftovers on nights like this. so easy to just heat and eat! i made parmesan crusted turkey cutlets and garlic sweet potato mash (both from gina) and served them with some asparagus. these are delicious though i am utter shit at getting breaded things to stay breaded. how does one develop this skill?
dessert {8:00} - currently enjoying a pb maple shake while catching up on blogs and watching the new episode of white collar. i'm a happy camper.

Tomato basil hummus sounds great. I had not heard of it before until this blog post. I will have to be on the lookout for it.
ReplyDeleteSpeaking of crunchy foods...I am always so self-conscious whenever I eat crunchy foods like carrots and apples while on break at work. I sit at my desk and it is usually pretty quite so everyone sitting around me probably finds it overly annoying...oops! ;)

ReplyDelete100% agree on the eggs vs. cereal thing. I actually rarely even buy cereal these days because I know if I eat it for breakfast, I'll be hungry approximately 2 seconds later. Oatmeal holds me over pretty well, but cold cereal...not at all. Ha, I loved the "as many rounds as possible" workout. Literally got in two rounds before the 10 minutes were up. Go me! Hahaha. Made things go a lot faster, though!
